Bannana marinated chicken salad

Ingredients (4 pers):

2 large organic or free range chicken breasts

Marinade

2 bananas

1 tomato

4-5 tbl spoons of olive oil

3-4 cloves of chopped garlic

½ lemon

1 tbl spoon of paprika

½ tbl spoon of cumin seeds

½ tbl spoon of turmeric powder

a pinch of salt

a pinch of black pepper

Salad

¼ head of chopped red cabbage

½ head of green quality lettuce

1 red capsicum

½ a mango, orange or pineapple

Preparation

Chop the chicken into bite sized pieces.

Mash the bananas and mix with olive oil. Add chopped tomato. Blend in the paprika, cumin seeds, turmeric, garlic, salt and pepper. Finally, grate in lemon peel and squeeze out the juice. Use this as a marinade for the chicken.

Leave chicken in marinade in the fridge for at least 2 hours.

Prepare salad.

Fry the chicken in a pan on a medium heat with a lid until cooked.

Add chicken to salad and serve.
